IN N OUT SMASHBURGER  Ive tried them all, but in n out holds the top spot for fast burgers in my heart. Let me know if you disagree below!! . For this recipe, I used lean ground beef, a lowcarb tortilla, a thin slice of cheese, and a healthier spin to the in n out sauce. . Here is how I made it: . 1.Start with 1lb lean ground beef. Season with a couple generous pinches salt, fresh cracked pepper, and 2 tsp garlic powder. Mix well. Then form into small, thin patties, you’ll get 6-8 patties depending on how thin you make them. . 2.Put the patties on a piece of parchment paper, top with your favorite low carb tortilla, put parchment paper on top and apply some weight on top to spread it out. You want to have a thin layer of the meat covering the surface of the tortilla. I used my hands, but you can use a rolling pin or a bottle, too. . 3.Spread 1 tsp of mustard over each pattie. Let sit while you make the onions & sauce. . 4.To make the caramelized onion, dice up 1 large yellow onion. Add 1tbsp butter to a pan on medium-low heat, add the diced onion & a couple pinches salt, and stir frequently until caramelized. Be patient here, its worth it. I like to add 1 tbsp balsamic here to help it get a nice color when they’re almost done. When done, turn off heat & set aside. . 5.To make the sauce, mix 2 tbsp avocado oil mayo, 2 tbsp unsweetened ketchup, 2 tsp white vinegar, 1/2 tsp powdered monkfruit sweetener, 1/2 tsp smoked paprika, 1 tbsp relish (or 1/2 a small dill pickle, grated). Mix well, taste, & adjust to your taste. . 6.Spray a pan with cooking spray. Put the tortilla with the meat side down on medium-high heat for 2-3 mins, pressing it down with a spatula to get a nice crust. Flip, tilt a little bit to get rid of any excess moisture from the ground beef, then cook for a minute on the tortilla side down. . 7.Place a thin slice of your favorite cheese on the tortilla meat side up & put the lid on for a few seconds to melt. Remove, then top with your favorite toppings. I added lettuce, tomato, a tablespoon or so of the onions, and some of the sauce. .
