Round out your long wknd with some delicious ny style cheesecake, topped with orange-cranberry curd! 🤤🤤🤤 It is seriously so bright and refreshing to eat! Recipe ⬇️ What you need: Crust * 2 cups graham cracker crumbs * 4 tbsp granulated sugar * 1/2 cup butter, melted * pinch of salt Cheesecake * 4 (8 oz) packages cream cheese, at room temperature * 1 cup granulated sugar * 1/2 plus 2 tbsp cup sour cream, room temperature * 2 tsp vanilla * 1 tsp lemon juice * Pinch of salt * 4 eggs What to do: Crust 1. Preheat oven to 350 degrees. 2. For the crust, place grahams in a food processor and blend until smooth. You can also place grahams in a ziplock bag and smash with a rolling pin or soup can. Add butter, sugar, mix until combine. 3. Take your 9 inch springform pan and wrap the bottom and sides with aluminum foil. You dont want moisture getting to the crust. Bake crust for about 10 minutes. Then remove and cool. 4. Pour graham mixture into the pan and press the crust into the bottom and up the sides. You can use a greased measuring cup to evenly press everything into place. 5. For the cheesecake mix, using a stand mixer with paddle attachment, mix on low/medium the cream cheese and sugar. Once incorporated, add sour cream, salt, lemon juice and vanilla. Mix. Then add eggs one at a time. Mix on low, until egg streaks are no longer visible. 6. Pour mix into cooled cheesecake crust. Place cheesecake into a larger, deep pan. Pour warm to hot water into the pan (about 2 inches up the side) and gently place in the oven to bake for 1 hour. Once 1 hour has passed, turn off the heat and crack the door of the oven open. You can use a spatula or wooden spoon to help prop open the door. Let the cheesecake rest in the oven for about 30 minutes. Remove from oven, remove pan from water bath and let the cheesecake rest for about 1 hour at room temp. Then cover and chill for at least 6 hours. Overnight preferred. * 1 tsp orange zest

Pour mix back into medium saucepan and cook over medium heat until mixture thickens. About 5-7 minutes. Remove from heat, add butter, mix well. Then pour into a heat safe bowl. Chill 4 hrs/overnight

2. After draining the cranberry juice, in a separate bowl, mix sugar, egg and yolk until combined. Slowly pour the cranberry juice over the egg and sugar mix. Whisk rapidly for about 20-30 seconds.

1. Add ingredients (except butter) to a sauce pan, cook over low/medium heat. Cook until cranberries pop and liquify- 15 min. Once cranberries burst, remove and press through a strainer.
