You can see Mt.Fuji from Tokyo on good weather days. If you are taking bullet train to Kyoto, you can enjoy mt.Fuji view as well.

IMO start with Osaka first, then end with Tokyo, if you plan to go for shopping spree. you don't want to travel ard with heavy bags
