@ellysplate: We all know bacon & brussels sprouts are a match made in heaven so let’s turn them from a side dish to the main event 💖 Ingredients (serves 3) 200g brussels sprouts, shredded 4 cloves garlic, minced 1/2 white onion, finely diced 280g bucatini (or your preferred pasta) 100g vegan bacon lardons 2 tbsp non dairy butter 2 tbsp olive oil 1 tbsp balsamic vinegar 1 tsp liquid smoke 2 tbsp nutritional yeast Handful chopped parsley 1/2 vegetable stock cube, crumbled Lots of salt and pepper To serve Extra virgin olive oil Extra parsley 30g vegan parmesan, grated 1. Start by heating a glug of olive oil in a pan on medium heat and fry off your onion and garlic for a couple of minutes until softened. 2. Turn the heat up and add your sprouts along with the remaining oil and leave to char for a few minutes on each side. Season well. 3. Move the sprouts to the side of the pan and add the bacon, frying until golden before adding your remaining ingredients. There should be a good amount of oil still at the bottom of the pan to help form the sauce, if there isn’t, add a little extra. 4. Cook the bucatini to al dente & reserve a mug of pasta water when draining. 5. Add the bucatini into the mix and around half the pasta water. Stir until everything gets silky and glossy. Add extra pasta water if needed. 6. Serve with a drizzle of olive oil, grated parm and extra parsley. #brusselssprouts #pastarecipe #veganbacon #veganchristmasrecipe
