@andrejcooksfish: Spaghetti Vongole! 🇮🇹🍝🤌 The winning dish of my last poll needs no introduction. • • • 1. 300-400g live clams / vongole / palourdes (for 1 person). • 2. Purge the clams in salted cold water (35g of salt per 1l of water) for minimum 2 hours. Rinse and strain. • 3. Cook 150g of spaghetti or spaghettini, strain and keep on the side. Skim off some of the cooking water and reserve for later. • 4. Heat some olive oil and a splash of white wine over ripping heat, add the clams and cover. Remove clams as soon as they open (2-3 minutes) and reserve on the side with some of the cooking liquid to keep them juicy. • 5. Fry some sliced garlic in olive oil over medium-low heat. Once nicely coloured, add chopped chilli and anchovies. Deglaze with 150ml of dry white wine and reduce by 2/3. Add the cooking liquid from the clams and reduce. • 6. Pop the spaghetti in the sauce with some chopped parsley. Give it a stir and add some of the cooking water to make a creamy sauce. • 7. Add the vongole, enjoy, like and comment 🙏🐟 . . . #vongole #spaghettivongole #clams #pasta #italianfood
