@munchiesbymallory: santa hat white chocolate mini cheesecakes 🎅🎂 Graham cracker crust: In a food processor, pulse 8 Graham crackers until crumbs. Then combine with 3 tbsp melted butter & 1 tbsp granulated sugar. Press this mixture into a cupcake liner and bake at 325 for 5 minutes. Cheesecake filling: In a stand mixer, beat together 12 oz of room temperature cream cheese with 1/3 c granulated sugar. Once smooth, add in 1/2 c melted (the cooled) white chocolate chips, 1/4 c sour cream, & 1 tbsp vanilla extract. Mix until smooth then add 2 eggs (1 at a time). Scoop on top of the Graham cracker crust & bake at 325 for 15-18 minutes. Allow the cheesecake to cool then transfer to the fridge for 2-3 hours.
