@thefitlondoner: Prepare for shop bought bagels to never satisfy you ever again x Dough: ▫️500g white bread flour ▫️7g yeast ▫️300ml warm water ▫️20g sugar ▫️9g salt Poaching liquid: ▫️3 litres boiling water ▫️20g honey ▫️10g sugar ▫️15g baking soda ▫️15g salt Toppings: ▫️Egg wash (1 egg + 1 tbsp water) ▫️Seeds/toppings of choice Mix dough ingredients until combined. Knead for 10-15 mins, or until the dough is smooth and springs back slowly when pressed. Place dough in a lightly oiled bowl, cover, then leave to prove 1 hour. Punch down dough to de-gas. Divide dough into 8 and shape into bagels by pressing your index and thumb together until a hole forms. Place on a lined sheet, then cover again with a towel and prove a final 45 mins.
