@daniascuisine: Impress others with these addictive cookies and cream cheesecake cups. This recipe makes about 20 mini cheesecake cups (60mL cups). Bottom Oreo crumbs layer: Crumble 18 to 20 Oreos using a food processor. Scoop 1 tbsp of crumbs into each cup and flatten this layer using the bottom of an extra cup. Save any extra crumbs for decorating later. Middle cheesecake layer: In a large bowl, add 1 ⅓ cup cold heavy cream, ¾ cup powdered sugar, and 1 pack of vanilla sugar (or 1 tsp vanilla extract) then whip these together until stiff peaks form. Whip in 1 cup of room temperature cream cheese and 2 tbsp vanilla pudding mix (optional) until smooth. Fold in ½ cup of Oreo bits (5 Oreos); make sure they are small enough to not clog your piping tip. Pipe a thick layer of this cheesecake mixture into each cup using a piping bag fitted with a 1A Wilton tip. Top decoration: Melt ¼ cup of semisweet chocolate chips and drizzle some onto the top of each cheesecake cup. Finally, use your extra Oreo crumbs to decorate the cheesecake cup tops, or add a mini Oreo.
