Blend roasted veggies with basil and spring onion until smooth. 	4.	Cook gnocchi according to package instructions, reserving 1/4 cup of pasta water. 	5.	Heat the veggie sauce in a pan, adding reserved pasta water to loosen. 	6.	Toss gnocchi and three-quarters of the guanciale in the sauce.
