@plantpoweredjessica: Cosy mushroom risotto 🍄 A staple for me and once youve mastered one risotto you can play around with flavours and ingredients. Ingredients: 400g mushrooms (i used chestnut) 1 large onion diced 5 garlic cloves Handful fresh parsley 4 sprigs of thyme 1 tsp chopped rosemary 800ml of stock (i used the oxo meat free chicken) 3 tbsp olive oil 1 & 1/2 tbsp balsamic vinegar 4 handfuls of Risotto rice METHOD: • Make up your stock and keep it warm on a low heat • Add oil to a large wide pan. Add the diced onion, once soft add in sliced mushrooms, thyme, rosemary and cook for a further 5 minutes at a low - medium heat. • Add garlic and balsamic and cook for 1/2 minutes until it all gets a bit sticky. Transfer to a bowl. • in the same pan, add more oil and once hot add in risotto rice, moving it around to soak up all that goodness left in the pan. After a couple of minutes add a ladle of stock in and stir until absorbed, repeat this until rice is cooked. • remove from heat, add vegan parmasan and stir through, add back in mushroom mixture and aerve with a sprinkle of fresh parsley. #Recipe #risotto #vegan #dairyfree #meatfree #boujeeonabudget #cosymeals
