@mariannas_pantry: ROASTED BRUSSELS SPROUT AND QUINOA SALAD My go to warm salad that’s also perfect to bring to Christmas dinner Ingredients For the brussel sprouts 1.5 lbs shaved brussel sprouts Olive oil cooking spray 2 tsp salt 1 tsp garlic powder 1 tbsp balsamic vinegar 1 tbsp maple syrup For the toast quinoa 2 cups cooked quinoa Olive oil cooking spray 1 tsp salt For the salad 1/2 cup chopped pecans 1 apple, diced 2/3 cup reduced fat feta cheese (can sub vegan feta here) Dressing 3 tbsp Dijon mustard 3 tbsp balsamic vinegar 3 tbsp maple syrup 1 tbsp olive oil 1 tsp salt (plus more to taste) 3 tbsp warm water Instructions 1. Preheat oven to 425 F. Line 2 separate baking sheets with parchment paper. To one baking sheet add brussel sprouts and spray with olive oil cooking spray, add salt and garlic powder. Toss to combine then place in the oven for 20-25 minutes or until they start to brown. When they are done cooking remove from oven and add balsamic vinegar and maple syrup. Toss. 2. Reduce heat of oven to 400F. To the second baking sheet add cooked quinoa in an even layer then spray with olive oil cooking spray and season with salt. Place in the oven and cook for 20 minutes, tossing halfway through. 3. While quinoa cooks whisk together salad dressing ingredients, adding more salt to taste as needed. Set aside. 4. To a large bowl add brussel sprouts, toasted quinoa, apple, pecans, and feta. Pour over salad dressing and toss to combine. #quinoasalad #saladsoftiktok #saladrecipe
