INGREDIENTS (4 SERVING): 20 oz boneless skinless chicken thigh Salt Pepper Paprika Cayenne pepper Garlic powder Juice of 2-3 limes Juice of 1/2 orange 1.33 cup cooked nopales 1/4 cup chopped onion 2 Roma tomatoes Serrano pepper to taste (spicy) Cilantro to taste 120 g avocado (~1 small) Low calorie tortillas Avocado oil spray DIRECTIONS: 1. Chop chicken thighs into bite size pieces. 2. Season to taste with spices above and lime juice/orange juice. Marinate for at least 30 minutes and up to 8 hours. 3. Grease a pan with avocado oil spray and cook chicken thighs on high heat for 8-12 minutes. 4. Add nopales, 1/4 white onion, 3 garlic cloves, tomatillo peels, and 1 tbsp salt to a pan. 5. Cook for 10-13 minutes, stirring often. The nopales will release “baba” (slime) as they cook. Turn off the heat when they have changed to a dark green color. 6. Remove the onion, garlic, and peels. Rinse the nopales under cold water until there is no “baba.” Put to the side. 7. Chop tomatoes, onion, serranos, cilantro, and avocado. 8. Mix all the chopped vegetables with nopales with the juice of a lime and salt to taste. 9. 1 serving of tacos: warm up 4 low calorie tortillas on a comal for 30-50 seconds on each side. 10. Divide 3.5 oz of cooked chicken thigh to each onto the tortillas. 11.
