PASTA E FAGIOLI - is it pasta or soup 🧐 Pasta e fagioli (pasta + beans) is a dish I make all the time during winter, especially during January.  Similar to a minestrone, this brothy, beany pasta is packed full with all the good stuff, guaranteed to warm you up. A soup and pasta combined as one, the best thing about this is it’s completely adaptable based on what you have in your fridge + cupboard.  I’ve left my full written recipe below - enjoy!   INGREDIENTS (serves 4)   1 Red Onion 1 Carrot 1 Celery Stick 1/4 White Cabbage 1 Garlic Bulb 2 Tbsp Tomato Purée  1 Tbsp Dried Oregano 1 Tbsp Smoked Paprika 1 Tsp Chilli Flakes 700g Beans (I used white beans) 400g Chopped Tomatoes 1 Litre Vegetable Broth 150g Small Shaped Pasta (I used ditalini) Small Bunch of Basil Nutritional Yeast Olive Oil Salt Black Pepper   METHOD   1. Finely dice the onion, carrot + celery, then mince the garlic.  2. In a large saucepan, heat 2tbsp of olive oil on a medium heat. Once warmed, add the onion, carrot + celery with a large pinch of salt.  3. Sauté for 5-10 minutes until softened + catching the pan, then add the garlic, frying until fragrant.  4. Add the tomato purée with the oregano, paprika + chilli flakes, cooking out for another 2-3 minutes.  5. Add the beans, chopped tomatoes (oops forgot to record), veg stock, then season with salt + pepper & bring to the boil.  6. Lower the heat + simmer for 10-15 minutes. 7.  Add the pasta once the soup has simmered + cook until almost al dente. Once almost al dente, chuck in the cabbage, 2tbsp nutrtional yeast + allow to cook. 8. Spoon into bowls, top with fresh basil, olive oil, nutritional yeast + more chilli flakes - enjoy!  #pasta #soup #pastaefagioli #minestrone #comfortfood
