One of the first videos that we published in the early days of our channel was a documentary about Asin Tibuok. 🧂 Today, it’s talked about in many different media outlets (local and international!) and it’s being used in some of the best restaurants. 👨🏻‍🍳 The response to this unique artisanal salt has been overwhelmingly positive and we can’t help but hope that this continues. We always have to ask ourselves:

Sweet and sour pork is fine, but with mangoes? 🫨 We are in for a treat! Chef Martin made a special addition to one of our go-to dishes by adding a twist of Guimaras to it. 🥭 Not seen on the video: the steaming bowl of white rice that we devoured with this yummy ulam! How do you cook your version of sweet and sour pork? 🐷 MANGO SWEET AND SOUR PORK Ingredients: Marinade: 1 tbsp soy sauce ¼ tsp baking soda 1 clove garlic, grated 1 tsp grated ginger 1 tbsp cornstarch ½ kg pork shoulder, cut into thin strips 1 cup cornstarch 2 cups oil, for frying Sweet & Sour Sauce: 3 tbsp brown sugar ¼ cup mango ketchup ⅓ cup rice vinegar ½ tsp soy sauce 3 tbsp oil 1 pc onions, cut into chunks 1 pc red bell pepper, cut into chunks 1 pc green bell pepper, cut into chunks ½ cup ripe mango chunks Procedure: 1. Mix the marinade ingredients and add the pork. Let it marinade for 30 minutes. 2. Coat each piece in cornstarch and fry in hot oil until golden brown. Set aside. 3. Make the sauce by mixing all the ingredients. Set aside. 4. In a pan with hot oil, saute onions and bell peppers. Add sauce and bring to a simmer. 5. Cook until thick.
