So many comments on my Tongba making video suggested I give Chhyang a go. With a little help from @Himalayan Grocers again, I think I pulled it off. Chhyang uses the same fermentation agent as Tongba, called Marcha, and the process is quite similar. Steam the grain, mix it with Marcha, then let it ferment in a solid form for a few weeks to a few months. The difference, you don’t drink Chhyang hot. Once you have your fermented rice, you mix it with water for 12 hours, then filter out the solids. Long pour it out of one of these really cool kettles (called a karuwa) into some brass cups, and you’ve got yourself an authentic Nepalis staple of around 7% ABV. Pairs perfectly with Momo 👌 I actually made this two weeks ago already, so we’ll be releasing it along with the Tongba this Friday!
