@thrivingonplants: Cashew Cheese Christmas Tree 🎄🧀🌟 Ok so it’s dairy-free and technically not cheese… but it’s still damn delicious!! Plus super cute too 🤭 Try it out for yourself this Christmas: ✨ Ingredients 2 cups raw cashews 1/4 cup lemon juice 1/2 packed tsp lemon zest 1 tsp garlic powder or 1-2 cloves fresh garlic 1 tsp salt, or to taste 1/4 tsp freshly ground black pepper Optional: 1 tbsp nutritional yeast for an extra “cheesy” flavour To decorate ✨Fresh dill (parsley works too), finely chopped Cherry tomatoes Cheese or yellow capsicum/bell pepper, for the star on top Fresh rosemary ✨To serve Crackers Capsicum/pepper sticks Celery sticks Method: 1. Soak your cashews in boiling water for minimum 10-15 minutes. Or alternately soak in room temperature water overnight. When ready to use, drain. 2. Add cashews, lemon juice, lemon zest, garlic, salt, pepper and nutritional yeast into a food processor. Process until it becomes a spreadable texture. If needed, add a few tbsp water to blend. 3. Place onto a piece of plastic wrap and shape into a tree. If it’s too soft, place into the fridge for an hour to harden slightly. 4. Spread the dill over a board or plate and pop the cashew cheese on top, rolling it until it’s completely covered. 5. Place into the middle of a board or plate and decorate with tomatoes, rosemary and use a star cookie cutter on the cheese or capsicum/pepper to create the star. 6.
