This is the perfect side dish to add to your festive table or to take to a dinner party! I bet the people will be coming back for more! Even the fussy little people 😝 I could honestly just eat this on it's own and I would be smiling. Here is how we make her: Ingredients: 500g Pumpkin 300g Broccoli & Cauliflower 200g Mushrooms 1 Bell Pepper 200g Baby Marrow Sauce: 300ml Fat Free Milk 3 Tbsp Maizena 1 Tsp Garlic Powder 1 Tsp Oregano Salt & Pepper 120g Smooth Fat Free Cottage Cheese Topping: 20g Mature Cheddar Cheese Instructions: 1. Preheat the oven to 200 degrees 2. Steam the pumpkin & cauliflower + broccoli mix until soft. I do this by cutting off the corner of the bag and placing them in the microwave for 8-10 minutes 3. Chop the mushrooms, pepper and zucchini into small pieces 4. Sauté them on a non-stick pan with non-stick spray 5. Season the veggies and allow to brown and soften 6. Start with the cheese sauce - bring the milk to a gentle simmer in a small saucepan - it should not be boiling 7. In a small bowl, mix the maizena with a small amount of milk to create a thin paste 8. Pour the maizena into the hot milk while stirring constantly 9. The mixture will begin to thicken - continue stirring to avoid any lumps 10. Season with garlic powder, oregano, salt & pepper - allow to cook for a further 5 minutes while stirring 11. Remove from the heat and stir in the cottage cheese - the sauce is now ready to go 12. In a large mixing bowl (you can use the pan with the sautéed veg) - add the pumpkin, broccoli, sautéed veg and the cheese sauce - season again with salt and pepper and combine well 13. Grease a medium sized pyrex dish and add the veggie mixture 14. Top with grated cheese and bake for 20-25 minutes or until the top is crispy and golden - remove from the oven and allow to cool slightly. 15. Cut into 6 large portions or 8 medium sized portions - serve with your favourite protein! Enjoy! Entire recipe: Calories: 667 Protein: 51g Carbs: 106g Fat: 11g Per portion (6 large serves): Calories: 111 Protein: 8,6g Carbs: 17g Fat: 1,8g
