Crispy Potato Pancakes 2 cups leftover mashed potatoes (mine were Idahoan four cheese) 4 slices of bacon 1 egg 1 cup shredded cheddar cheese 1/3 cup all purpose flour or all purpose baking mix Dried onion or chive (optional) Sour cream for topping Cut bacon into small pieces and fry until crispy. Drain bacon but leave drippings. Into leftover mashed potatoes add 1 egg, shredded cheese, cooked bacon, 1 teaspoon of dried onions or chives, and 1/3 cup flour or baking mix. Dollop into skillet and using a greased flat glass or measuring cup press into patties. Fry until brown and gently flip then fry until crispy. Press this into an even layer on the bottom of your baking dish. Add a layer of oreo cookies (if you want to soften the cookies you may want to dunk them in milk for a few seconds each, otherwise the cookies will stay very crispy) Prepare the brownie mix and pour it over top making sure that all of the brownies are covered. Bake at 350 degrees for 40 to 45 minutes until a toothpick inserted in the center comes out clean.
