Flour - 250 gr. Durum wheat semolina - 5 Eggs - 5 tbsp olive oil Instructions: 1. Knead all the ingredients for the dough until a firm dough is formed. It should resemble the dough of lasagna. Let the dough rest wrapped for 30 minutes. 2. Dice the onions finely and fry them in butter over medium heat until they become translucent. 3. Add the spinach and sauté it until the liquid evaporates. 4. Put the bread in water to become moist. 5. When it cools down, mix it together with the minced meat, finely chopped garlic, herbs, salt, pepper, nutmeg, moist bread and eggs 6. Pass the mixture through a meat grinder so it becomes smooth and consistent. 7. Roll out the noodle dough until it's about 0.8 mm thin.  8. Spread the filling along the center of the long strips of dough.  9. Brush the empty areas with water to help the dough stick together.  10. Fold the bottom part over the filling and then fold the top part over it, pressing to seal.  11. Cut the Maultaschen with a pastry wheel and press the edges together. 12. Bring about 2-3 liters of vegetable broth to a boil.  13. Place the Maultaschen in the broth and cook until they float to the top. 14. The Maultaschen can be served with the broth or fried with some onions and butter and served with potato salad. Enjoy 🖤❤️💛
