@lizamarie_fit: full recipe ⬇️ INGREDIENTS: * 1 tsp evoo * 15 oz sausage (I use hot Italian) * 8oz rigatoni * 1 1/2 cup chicken bone broth * 1 cup low fat cottage cheese * 4 cloves garlic minced * 3 tsp Italian seasoning * 1 can tomato paste * Handful of spinach * 2 tsp garlic powder * 1 tbsp parm cheese METHOD: 1. Heat evoo in your pot, (I use a dutch oven or a large deep skillet - the more non stick the better!) cook your crumble sausage all the way through about 5 mins 2. While your sausage is cooking blend your cottage cheese until smooth I like to add cottage cheese, garlic powder and part cheese to the blender with a splash of water 3. To the same skillet with sausage, add uncooked rigatoni, chicken broth, creamed cottage cheese, minced garlic, Italian seasoning, and tomato paste. 4. Bring to a boil on medium heat and stir everything well. Cover with a lid, and allow the pasta to cook for about 10 to 15 minutes on medium heat, while the sauce boils. 5. Cook until pasta reaches an "al dente" texture. Stir frequently to prevent pasta and sausage from sticking to the bottom of the pan. 6. Add your fresh spinach and stir until wilted 7. Cook longer if you would like a thicker sauce. 8. Mix everything well. Remove from heat. Season with salt, parm cheese, freshly ground coarse black pepper, and red pepper flakes if you like!
