My husband hates mushrooms but I’m determined to convert him. This was not the day… BUT, today was the first day my kids decided they will eat mushrooms! 🥳 My eldest had to try one raw first. He said, and I quote, “this is kind of fire.” I love this meal because it’s yummy, healthy and easy to make.  Chicken, Mushroom & Quinoa Skillet Ingredients For the Chicken 2½ lbs boneless, skinless chicken thighs 1 tsp onion powder 1 tsp garlic powder ½ tsp smoked paprika 2 tsp kosher salt ½ tsp black pepper 1 tsp poultry seasoning For the Quinoa 2 cups quinoa 4 cups chicken broth (I used bone broth) 1 yellow onion, diced 2 cups chopped mushrooms 5 oz baby spinach 4 cloves garlic, minced 1 bay leaf Salt to taste Oil, for cooking Instructions Combine the chicken thighs with the onion powder, garlic powder, smoked paprika, kosher salt, black pepper, and poultry seasoning. Mix well and set aside. Heat a large skillet over medium-high heat. Add a little oil and sear the chicken in batches until browned on each side, but not cooked through. Set the chicken aside. Add more oil to the pan if needed, then add the onion and mushrooms. Cook until the onions become slightly caramelized. Add the garlic and cook for 1 to 2 minutes, until fragrant. Next, add the quinoa and chicken broth. Mix gently, then add the bay leaf. Bring to a simmer, cover, and cook for 8 to 10 minutes. Uncover and add the chicken back to the skillet along with any juices. Nestle the chicken into the broth and quinoa. Cover again and allow it to simmer for another 20 to 25 minutes, or until the chicken is cooked through and reaches an internal temperature of at least 165°F. Remove the chicken from the skillet and cut it into bite-sized pieces. Add the spinach to the skillet and stir until wilted. Return the chopped chicken to the skillet and mix everything together.
