The entire reason I’d crust a steak with pepper is because I love peppercorns .. I’ll even eat em whole on occasion. Seems like I’d lose a part of why I like them, no?

I imagine you can simmer for more or less time to affect spice level while maintaining black pepper flavor. Can always crack more fresh on top.

I have another test for you take some pepper and place it in a smoker for a few hours and see how much is pulled out of it
