POV: You make your own vegan eggs with beans.👀🌱🥚 Cookware & Blender: Our Place (Link in bio) Mung Bean Vegan “Egg” Scramble ✨ •1 cup split yellow mung beans (moong dal), soaked for 3 hours •1 cup spring water •2 tbsp nutritional yeast •1 tsp turmeric •1 tsp black salt (kala namak) – for an eggy flavor •½ tsp garlic powder •½ tsp onion powder • ¼ tsp baking powder (optional, for fluffiness) •Salt and pepper to taste •1 tbsp oil or vegan butter •1 cup of mixed veggies (bell peppers, spinach, mushrooms, etc.) • Fresh herbs like chives or cilantro for garnish Instructions⬇️ 1. Rinse and clean your mung beans until the water is clear. Add to a jar with fresh water and let soak in the fridge 4-6 hours. 2. Rinse and drain the soaked mung beans. 3. Blend the mung beans with water, nutritional yeast, turmeric, black salt, garlic powder, onion powder, and baking powder until you have a smooth, pancake-like batter. Add a little more water if too thick. 4. Heat oil in a nonstick pan over medium heat. 5. Sauté your mixed veggies for 3-4 minutes until tender. 6. Pour the mung bean batter into the pan with the veggies. 7. Let it cook for 1-2 minutes until it starts to set. 8. Using a spatula, scramble the mixture, breaking it up like scrambled eggs. Cook for another 4-5 minutes until it’s firm and golden brown. 9.
