@foodwithbearhands: First Ever Prime Rib Beef Wellington Full Recipe ⤵️⤵️⤵️ 6 lb Prime Rib Sear on all sides Paint Mustard Season with Salt & Pepper To make the Duxelles: Mince 🔪 1 lb Baby Bella Whole Mushrooms 2 Shallots 6 Garlic Cloves 3 ounces of Red Wine In a pan cook on medium to high heat until all moisture is gone Prosciutto on plastic wrap enough to cover the Prime Rib and add the Duxelles on top of the prosciutto then wrap the Prime Rib. After wrapping place in the fridge for 15 minutes to form. Next lay out puff pastry. I used 4 sheets of store bought puff pastry and rolled it out flat. Unwrap the Prime Rib and cover with the Pastry. I also used 1/2 of a sheet to make a lattice for a nice decoration. Then paint on an egg wash. This is extra but I used Rosemary to decorate as well. In the smoker or oven at 425 degrees until the thickest part of the Prime Rib hits 120 degrees. I used the TempSpike Plus to track all my temps! This Thermometer makes cooking so easy with the WiFi features that I can track from my phone. This 6lb Prime Rib took me 1 hr and 40 minutes to get to 120 degrees Internal.
