@harrisonwebb97: Chilli roast potatoes 🌶️ 🥔 2kg Maris Piper or King Edward potatoes 5 Tbsp Goose fat 3 chillies Chilli Salt 1 Tbsp Sea salt 1/2tsp paprika 1/2tsp chilli powder • Preheat the oven to 180ºC/350ºF. • Peel and quarter the potatoes (or halve smaller ones). Wash them under running water to remove the starchy residue until the water is clear. •Salt the cold water, add 2 chillies split down the middle with the potatoes, and simmer for 15-20 minutes until soft. •Pour goose fat into a roasting tray. Drain and roughen the potatoes in a colander. Let them cool for 5 minutes, then coat them evenly in the hot fat using a large spoon. • Roast for 1hr 30 minutes, turning every 30 minutes. Add one chilli chopped up for the last 5/10mins of cooking time. • Make chilli salt by combining salt, chilli powder & paprika in a mortar and pestle. • Remove the potatoes from the oven, drain on kitchen towels, and generously sprinkle with chilli salt. Note: any recipe that says they only need to be in for 40-50 minutes are never going to be crispy enough.
