Apple cider donuts but in cookie from 🍎🍪 super soft, chewy, and cozy! 🤎 RECIPE 🤎 Apple Cider Cookies: 2 cups apple cider 1 cup unsalted butter (2 sticks)  2½ cups all- purpose flour 2 teaspoons pumpkin pie spice 1 teaspoon cornstarch 1 teaspoon baking powder ¼ teaspoon baking soda ½ teaspoon salt 1¼ cup brown sugar ¼ cup granulated sugar 1 large egg (room temperature) 1 large egg yolk (room temperature) 1 tablespoon vanilla bean paste (or 1 tsp of vanilla extract)  Apple Cider Butter: 4 tablespoons unsalted butter (melted) 2 tablespoons apple cider   Cinnamon Sugar: ¾ cup granulated sugar 2 teaspoons ground cinnamon Directions: 1. In a small sauce pan over medium-heat, heat the apple cider to a gentle boil/simmer. Cook until apple cider reduces to about ¼ cup (15-20 minutes). Set aside to cool.  2. In another small sauce pan, melt butter over medium heat. Turn heat to low, whisk butter as it cooks to prevent burning. Cook until butter has a dark amber hue (10-12 minutes). Set aside to cool.  3. In a medium size bowl, add and whisk the dry ingredients; flour, pumpkin pie spice, cornstarch, baking powder, baking soda, and salt. Set aside.  4. In a large mixing bowl, add the brown sugar, granulated sugar, egg, egg yolk, vanilla bean paste/extract, cooled apple cider, and cooled brown butter. Whisk until smooth and well combined.  5. Gently stir the dry ingredients into the wet ingredients until just combined.  6. Preheat oven to 375°.  7. Cover with plastic wrap and place in fridge while oven preheats.  8. Line a baking sheet with parchment paper.  9. Using a cookie scoop (2 tablespoons), scoop apple cider cookie dough onto the baking sheet, 3 inches apart.  10. Bake cookies for 9-10 minutes or until edges are set.  11. Allow cookies to cool on baking sheet for 5 minutes before moving them onto a wire rack to cool completely.  12. For the apple cider butter, melt the butter in 30 second intervals. Add the melted butter and apple cider to a small bowl and give it a good mix. Set aside.  13. For the cinnamon sugar mixture, add the granulated sugar and cinnamon to a small bowl and give it a good mix until well combined.  14. Once cookies have cooled to room temperature, brush the top of each cookie with the apple cider butter. Press the butter side of the cookie into the cinnamon sugar mixture.
