CHUCK ROAST TACOS (In instant pot) 3 lbs chuck roast, cut into large chunks
1 tbsp olive oil
1 onion, sliced
3 cloves minced garlic 
1 tbsp chili powder
1 tsp cumin 1 tsp smoked paprika
1 tsp oregano 1 tsp chipotle powder 1/2 cup beef broth
Juice of 1 lime
1 tbsp apple cider vinegar
salt and pepper to taste For serving:
Small tortillas (I used low carb) 
Pickled red onions or fresh diced onions
Fresh cilantro

Avocado Lime Tapatio 
Set the Instant Pot to Saute mode. Add oil and sear the chuck roast pieces for 2-3 minutes per side until browned. Remove from pot and set aside. 
Add sliced onions and garlic to the pot and sauté for 2 minutes. Stir in chili powder, cumin, smoked paprika, oregano, and chipotle powder. Cook for 1 minute to toast the spices. 
Return the chuck roast to the pot. Add in your beef broth, lime juice, and apple cider vinegar. Secure the lid, set the vent to

Remove the beef, shred it with two forks, and season with salt. You can also reserve the liquid the meat was cooked in for dipping- YUMMM. 
Char tortillas over an open flame. Fill with your beef, chopped onions, cilantro, cotija cheese, avocado, and Tapatio or whatever hot sauce you likeeee! ENJOY!!!! #chuckroast #tacos #EasyRecipes
