Khao Soi Gai is a Northern Thai noodle soup with tender chicken simmered in a rich, fragrant coconut curry broth. Since this dish is usually topped with crispy fried noodles, I randomly thought of making a crispy fried noodle nest and filled it with quail eggs, greens onions, thinly sliced red onions, and cilantro (like a nest in a tree) ☺️. The fun part about cooking is “playing with ideas” and getting creative! To make the nest, I cooked the egg noodles halfway. Then dried it out. Wrapped it around small upside bowls. Coat with oil and air fried it until crispy! Ingredients: - Curry paste: 4 tbsp (about 60 g) see how I made it in my next post! - Coconut cream: 1 cup (240 ml) - Chicken: 500 g (1 lb), bone-in thighs or drumsticks - Okra: 300 (about 12 pods) - Snake beans: 200 g, cut into 5 cm (2 in) pieces - Water: 3 cups (720 ml) - Fish sauce: 2 tbsp - Soy sauce: 1 tbsp - Lime juice: 2 tbsp (about 1 lime) - Egg noodles: 400 g (14 oz), fresh. Set aside about a quarter to fry crispy for topping. - Garnish: cilantro, green onions, thinly sliced red onions, quail eggs, lime Instructions: 1.	Set aside about a quarter of the noodles for crisping. Cook the rest per package directions (about 3 minutes), drain, rinse. 2. In a pot over medium heat, simmer the thick top half of the coconut cream until it separates and shimmers. Add the curry paste and fry 3-4 minutes until fragrant and darker. 3.	Add the chicken. Cook about 3 minutes. 4. Add the remaining coconut cream, water, fish sauce, and soy sauce. Simmer gently for about 10 minutes until the chicken is tender. 5. Add the okra and snake beans. Simmer about 5 minutes. 6. Remove from heat and stir in the lime juice. Adjust with more fish sauce for salt or lime for brightness. 7. Ladle curry, chicken, and vegetables over the noodles. Top with crispy noodles, green onions, cilantro, red onions, and enjoy!
