Tonight I made an ostrich Wellington. I have cooked with ostrich meat a couple of times and I’m always surprised how much ostrich reminds me of beef in taste and texture. The biggest difference is that ostrich is really lean and doesn’t have a lot of fat. I was really excited to see how this turned out as a Wellington. I was so scared to overcook the ostrich I cooked it in the fridge for 30 minutes between each step. Also apologizing for not recording the mushroom part I accidentally broke a cabinet in my parents kitchen 🙈🙈🙈🙈 For the puff pastry I let it set to room temperature then my family helped me cut little star shapes for the decoration. I am so excited with how it turned out. I added a little bit of egg wash and fleur de sel on top then baked at 425 until the puff pasty turned golden brown. I also cranked the oven to broil for about one minute before removing it to give a little bit of extra color. The final result was absolutely amazing! I had left over garlic sauce from steak tips I made that I used to garnish and I made a brocolli and cauliflower mash to go as the base- but for my first time making a Wellington and making an ostrich Wellington I’m stoked at how this turned out! #beefwellington #gordonramsay #ostrich
