There is just something I love about a mini dessert: plus a powdered sugar topping that melts in your mouth as you eat them… Save the full recipe below: YIELD: 6-7 regular or 10-11 mini DONUTS Prep Time: 10 minutes Bake Time: 15-18 minutes INGREDIENTS 1 C oat flour 1/2 C coconut flour 1 tsp baking powder 1/2 tsp baking soda 2/3C full fat coconut milk (substitute with creamy milk of choice) 1/3-1/2C coconut sugar (to taste)* 1/4C maple syrup 1/3C refined coconut oil* (may substitute melted butter) 2 large eggs, plus 1 yolk 1 tsp vanilla extract Topping 1/2C monk fruit powdered sugar or organic powdered sugar Recipe Notes *Blend gluten free oats into flour in a high speed blender. *If not concerned about refined sugar, may sub brown sugar for coconut sugar. *I use refined coconut oil to avoid the coconut flavor. DIRECTIONS: 1) Preheat oven to 375 degrees. Generously oil a nonstick or silicone donut pan. 2) In large bowl mix all dry ingredients (coconut flour, oat flour, baking powder/soda), sifting any clumps. 3) In another bowl, mix the coconut milk with eggs, maple syrup vanilla and sugar. 4) Combine wet and dry ingredients then stir in coconut oil. Combine until just mixed. Batter will be thick batter but not too doughy. 5) Spoon in batter to each donut mold, about 3/4 of the way full. Pack down donut pan on counter or hard surface to remove air bubbles. Bake for 15 minutes, or until edges are golden brown. 6) Whisk the ingredients for the powdered sugar while donuts are baking. Finish donuts: 8) Gently carve out each donut with a spatula.
