PUMPKIN OATMEAL CREAM PIE RECIPE *makes ~18 cookie sandwiches Cookies: •1 cup unsalted room temp butter (226g) •6 tbsp blotted Libby’s pure pumpkin (86g) •1 ¼ cup packed dark brown sugar (285g) •½ cup granulated sugar (106g) •1 heaping tbsp molasses (19g) •1 room temp egg •Vanilla extract to taste (no more than 2-3 tsp) •2 ¼ cup all-purpose flour (292g) •3 cups quick oats (304g) •½ tsp Pumpkin Pie Spice (2g) •½ tsp ground cinnamon (2g) •1 tsp baking soda (6g) •½ tsp baking powder (2g) •¼ tsp fine salt (1g) Icing: •¾ cup unsalted room temp butter (170g) •3 oz room temp cream cheese (85g) •1/8 tsp fine salt •Vanilla extract to taste •12 oz powdered sugar (338g) •½ tsp ground cinnamon (2g) •1 tsp pumpkin pie spice (4g) •¼ tsp pumpkin pie spice extract (1ml) •1 tbsp heavy cream (15ml) Cookies: •In a large bowl, whip the room temp butter & sugars until light & fluffy •Add the egg, vanilla, blotted pumpkin, & molasses. Mix until combined.  •*To blot the pumpkin, tightly squeeze the pure pumpkin in between paper towels in order to get as much moisture out as possible. After that, measure out 86g grams or 6tbsp.  •In a separate bowl, whisk together the dry ingredients •Add the wet to the dry ingredients & mix until just combined •Scoop 1 heaping tbsp of dough per cookie •Place the dough balls in the fridge for ~30 mins to set •Preheat oven to 350F & line a baking sheet w/ parchment  •Place dough balls 2” apart on the baking sheet & squish them down using a rubber spatula (they won’t spread much while baking). Bake for 8-10 mins •Cool completely Icing: •In a mixer w/ a paddle attachment, cream the butter & cream cheese together until light & fluffy (~5 mins. on medium speed) •Add the salt & vanilla. Mix until combined •Add the remaining icing ingredients & mix until smooth •Once the cookies have cooled, add ~1 tbsp of frosting to one cookie.
