Level goes down. The rock in the boat displaces it's weight in water. When it sinks it just displaces it's volume, which is less.

Depends on the rocks density. A heavy but small rock would displace less water out of the boat than in. A light but large rock would do the opposite.

I think the easiest way to solve this is imagining an infinitely small rock heavy enough to almost submerge the boat and a boat that weighs the same as air.

archimedes claims the level of water will be the same but since the boat draft decreases the level of the boat relative to the ground gets higher.

Vol. displaced in-boat is equal to “mass of rock in water”. out, vol. displaced is just vol of rock. So water sinks. Since rock sinks, it’s denser

Boat displacement depends on its mass including cargo. Therefore water displacement remains balanced when rock changes positions. Boat goes up.

Boat level goes slightly up relative to the ground because water level and boat rise offset. Then the rock makes the water go up a little more.
