@dollartreedinners: @hungryjack Bacon Upside Down Pancake You will need: 2 cups of Hungry Jack Buttermilk pancake mix 6 ounces of bacon 3 tablespoons of butter 1/3 cup of brown sugar Nonstick cooking spray Syrup for topping Chop the bacon into smaller pieces and and fry until crisp, drain and set aside. Spray an 8 or 9 inch round cake pan with nonstick cooking spray and pour in your melted butter. Layer on the brown sugar and spread evenly. Top with cooked bacon. Mix Hungry Jack pancake mix with 1 & 1/2 cups of water per the box instructions and pour over your bacon topping. Bake at 350 degrees for 30 to 35 minutes until golden brown on top. As soon as you remove it from the oven, invert it onto a plate, cut into 6 slices and serve with syrup.
