Since botulism spores can grow only under vacuum and at temps as low as 38f what is the benefit of pulling a vacuum versus just putting a lid on it?

You can only store meat safely in the fridge vacuum sealed 3-5 days. Works great with dry goods tho.

that is not the same as canning. it needs to be pressure canned to be shelf stable and safe.
