@therealpauliecooks: Lamb Tagine with Dates, Almonds and Pistachios **tagine emoji** 🇲🇦 @Le Creuset 2lbs boneless leg of lamb trimmed 2 tablespoons olive oil 1 tablespoon butter or Ghee 2 grated onions 2 tsp cinnamon 1 tsp ground ginger 2 tsp tumeric 1/2 tsp fresh ground nutmeg 1 tbsp fresh ginger grated About 2 cups chicken stock or water 1 tbsp honey 8oz pitted dates 3 tbsp pistachios 2 tbsp almonds 1 tbsp of butter and 1 tbsp of olive oil parsley heat olive oil and butter, or ghee, and sear the lamb cut into about 1 1/2 inch peices. After browning, add the onions and ginger, sauté until golden, add spices and toast them, once fragrant add stock or water. Simmer for about 90 minutes and then add honey and dates. Cover and simmer 30 more minutes. season liberally with salt and pepper. In a small pan, toast the pistachios and almonds in butter and olive oil. Pour them over the finished tagine and top with a few splashes of red wine vinegar and parsely. Serve with buttery couscous. #tagine #lambtagine #lecreuset
