@thepantryboy: Braised Beef Short Ribs Ingredients Beef Short Ribs 3kg (3 Ribs) Oil 3 Tbs Celery 2 Stalks Carrot 1 Pc Onion 1 Pc Brown Button Mushroom 200g Tomato Paste 2 tbs Flour 1 Tbs Red Wine 1/2 Bottle Water enough to cover ingredients Salt to taste Bouquet Garni Leek Leaf 1 Pc Rosemary 1 Sprig Thyme 1 Sprig Flat Leaf Parsley 1 Sprig Bay Leaf 1 Pc Polenta Polenta 100g Chicken Stock 500g Salt to taste Butter 40g Steps 1. Sear beef in pot with oil until brown on all sides 2. Remove beef from pot and sauté vegetables until brown 3. Add tomato paste, cook for 1 minute followed by flour and cook for an additional minute 4. Add beef back into pot and deglaze with red wine 5. Reduce by half, add water, bouquet garni and salt 6. Braise in 180deg.c oven for 4-6 hours until tender and falling apart 7. Cook polenta by adding it into hot chicken stock and stirring for 5 minutes 8. Season with salt and finish with butter 9.
