@katherinewants: In Katherine's eyes, there's nothing better than Tom Kha Soup. 🍲 Serves: 2-8 Prep time: 10 minutes Cook time: 16 minutes Special tools: sharp knife and a beautiful soup pot Ingredients: 4 cloves garlic, sliced 1 onion, diced 1 pencil chillies, sliced 2 Thai chilies, sliced 2 tablespoons ginger, julienned 2 stocks lemongrass, smashed 1 tablespoon coconut oil 1.5 tablespoon red curry paste 1.5 litres chicken stock 1 can coconut cream 1 tablespoons fish sauce 1 tablespoon cane sugar 1.5 lime, juiced 1.5 cups mushrooms, sliced 1 cup green onion, sliced 1 cup cilantro, chopped 2 cups shrimp and scallops Method: 1. In a large pot on medium heat sweat garlic, onions, chillies, ginger and lemon grass in coconut oil. 2. Add curry paste and deglaze with chicken stock. Bring to a soft simmer and add coconut cream, fish sauce and sugar. Remove lemongrass. 3. Balance with lime juice and add shrimp and scallops, mushrooms, green onion, and cilantro. 4.
