The birds’ black color occurs as a result of excessive tissue pigmentation, caused by a genetic disease known as fibromelanosis. Fibromelanosis also occurs in some other breeds of black or blue-skinned chickens, such as the Silkie. The meat is highly valued for its unique appearance and is often considered a delicacy. The flesh is dark and has a gamey taste.
