u shouldn't add soy sauce cause jamaican don't use that for oxtail, if u want the jamaica favor, u should also use maggi seasoning ,pimento if u want

I’m from dr and pr we also caramelize our oxtail but instead put oil let it get hot and add honey instead of sugar and wait till it’s very dark
