but couldn't you achieve a similar effect with a dry brine? Then you wouldn't be introducing alot of extra unnecessary moisture which is the mortal enemy of crispy skin?

6% works for me , it’s seasons it all the way through and makes it juicy. You can flavour the brine as well.
