Disgusting-ly good French Toast: Ingredients: - 2 x 3-4cm thick slices of brioche - 50g Nutella - 2 eggs - I tbsp + 100g caster sugar - 3 tsp cinnamon (1 for custard, 2 for sugar) - 1 tbsp butter 1. Make an incision in the bottom of the brioche slices, 3/4 of the way through to the top, leaving 1cm either side to not slice all the way through. 2. Using two teaspoons, evenly divide Nutella and spoon into the hole created in the brioche 3. Combine eggs, 1 tbsp sugar and cinnamon in a bowl and whisk to combine. Add milk and whisk to combine. 4. Hear butter in a non-stick pan on medium, until melted and slightly frothy. 5. Submerge stuffed brioche into egg mixture and gently press down for 5-10 seconds. Flip and soak the other side of the slice. Repeat with remaining slices 6. Drain excess egg mix off the brioche before gently laying into the melted butter and cook for 2-3 minutes each side. Make sure the heat isn’t too high (you’ll know it’s too high if the butter turns dark brown and burns, if this happens, pour butter out, turn heat to low and add more butter) 7. Remove cooked brioche from the pan and add straight to a bowl of cinnamon sugar, consisting of 100g sugar and the remaining cinnamon. Coat both sides whilst hot for the sugar to stick best 8. Candied croissants 🍬🥐 Which one would you prefer, Savoury or Sweet? How to candy the croissant: 1. Roll the croissant as flat as possible with a rolling pin. 2. Place in a non-stick pan on medium/low heat. Put a sheet of baking paper on the top and then press down hard with something heavy, I used a pot 3. Add sugar. You can use whatever you want for this, I used maple syrup and a little sprinkle of white sugar, alternatively you can use brown sugar, golden syrup, honey etc. 4. Continue to cook on medium/low heat, flipping and turning the croissants until the sugars have melted and caramelised but haven’t burnt. 5. Take out and leave on a sheet of baking paper for 5-10 mins to cool and for the sugars to harden. 6. What should we name these ? 🌮 Ingredients: - 850g beef chuck - Onion 1 - Garlic 3 - Beef stock 500ml - 400g Tin tomato’s - 2 Bay leaves - Coriander half bunch fresh - Hot sauce half bottle - 1 tbsp chipotle in adobo sauce (coles) - 1 tbsp cumin - 1 tbsp paprika - 1 tsp rosemary - 1/2tsp white pepper 1. Season beef on both sides with salt and pepper, then sear in a medium sized pot until golden brown. Seat aside . 2. Peel and slice 1 onion and 2-3 cloves of garlic depending on the size. Sear onion in the same pot as the beef to get some colour before adding in the garlic. Allow to cook for 30 seconds to a minute before adding in your spices, followed by the tomato paste. 3. Toast off the spices and tomato paste briefly then deglaze the pot with 500ml of beef stock, scraping all of the bits off the bottom of the pot. 4. Add 1 400g tin of tomato’s (I used fresh tomato’s because they were going bad in the fridge), chopped coriander and bay leaves. Cover with 2 cups of fresh water and allow to cook for 2-4 hours or until beef is able to be pulled apart 5. Remove and shred beef, blend everything else until no lumps remain, add shredded beef back to the liquid and season to taste with salt and/or sugar to cut the bitterness 6.
