Full Recipe Below! 2 tablespoons olive oil 1 pound hot Italian sausage, removed from casings and crumbled 1 medium onion, diced 6 garlic cloves, minced 2 tablespoons tomato paste 1 14-ounce jar tomato puree (passata) 1 quart chicken stock 1 cup heavy cream Zest of 1 lemon, grated 10-ounces fresh tortellini 4 cups baby spinach 1/2 cup grated parmesan, plus more for topping 1/4 cup basil leaves Flat-leaf parsley, for garnish Sea salt and cracked black pepper Heat a deep pan over medium-heat and add the olive oil, then add the sausage and brown all over. Remove with a slotted spoon, then add the onion, a pinch of salt, and cook until translucent, about 5 - 7 minutes. Add the garlic and tomato paste, cook for 2 minutes, then add the tomato puree, stock, and bring to a simmer. Add the cream, lemon zest, a good pinch of salt, your sausage, tortellini, and bring to a rapid boil. Cook until the pasta is cooked to al dente perfection. Remove from the heat and stir in the spinach, parm, and a good crack or 3 of black pepper. Taste and adjust seasoning to taste. Plate up, top with basil, more cracked black pepper, more parm, garnish with parsley, and serve.
