Laziest Cheese and Onion Pie you’ll ever make.  Ingredients: - 2 tbsp Veg Oil - 1 large or 2 medium white onions - Knob of Butter - Frozen mash 500-700 - Splash of milk - Handful of Red Leicester Cheese - Handful of Mozzarella Cheese  *you can use 2-3 handfuls of grated four cheese  mix if you wish (instead of Red Leicester and mozzarella), this gives more depth in flavour. - Mozzarella to go on top - 2 Shortcrust or puff pastry  - 1 egg Method: 1. Heat the oil in a pan, then add diced onion. Add in a pinch of salt and stir. After cooking for a few minutes, add the butter. Continue cooking until the onions start to brown. 2. Once done, add the frozen mash followed by a splash of milk. Heat and stir until the mash breaks down to a smoother consistency. Add more splashes of milk if required. You can also use splashes of water if you wish. 3. Taste the mash and add salt as needed and stir. Taste until you’re happy with the mash flavour. Add the Red Leicester and mozzarella cheese (or 2-3 handfuls of four cheese mix - which I prefer). Stir through until the cheese melts through. 4. Grease a baking dish with some oil (or multiple small individual dishes). Line the bottom with the pastry and make holes with a fork. 5. Add the cheese and onion mash and level it out. Add a layer of your desired amount of mozzarella cheese (you can also add some mild cheddar for more flavour). Additionally, you can crack some black pepper over the cheese too. 6. Once done, place the second pastry rectangle on top. Press the edges, then using a fork, make holes in the top and then crimp the edges together. 7. Whisk an egg, then brush it along the top of the pastry. Place in the oven and cook as per instructions on the pastry box. You may require a little longer. I used puff pastry. Once done, allow it to rest for 5 minutes before serving. Note: if you want a pie with more cheese, then reduce the amount of potato mix and spread only a thin layer at the bottom of the pie. Then layer with multiple bags of grated four cheese mix until filled. Crack some black pepper over, then add the top pastry. (For this, mix half the onions with the mash, and the other half with the four cheese.) *it’s better to use a smaller baking dish to ensure the tray is filled when cooking. This will allow it to cook more even. Avoid having a pie with high crust/edges and shallow filling as the pastry won’t cook evenly on top.
