Don’t throw away your overripe bananas. Eggless, no refined sugar banana date cake🍌 Coming from someone who is not a banana bread fan… this was absolutely incredible. If there ever was a cake, so simple, this would be it. No need for a mixer, blender or any electrical appliances. Date molasses (silan) can be swapped for maple syrup. You can use all-purpose flour instead of self-rising flour — just make sure to add 1 teaspoon (6 g) baking powder. You can also use 2 full cups almond flour (200 g) instead of regular flour, add 1 teaspoon of baking powder in as well.  Ingredients 	•	3 very ripe bananas (330–360 g, peeled) 	•	¾ cup date molasses / silan or maple syrup (240 g) 	•	½ cup avocado oil (110 g) 	•	1 tsp vanilla extract (5 g) 	•	½ tsp salt (4.5 g) 	•	1 tsp baking soda (6 g) 	•	1 tbsp cinnamon (6.5 g) 	•	1½ cups self-rising flour (225 g) (or all-purpose flour + 1 tsp / 6 g baking powder) Optional toppings: 	•	Chocolate chips (70 g) 	•	Slivered almonds (15–25 g) 	•	whole dates  Instructions:  Add bananas, maple syrup, oil, and vanilla to a 9x13 inch baking pan. Mix till well combined. Add the flour, salt, baking soda, and cinnamon and mix again, just until smooth. Do not over-mix, overworking flour develops gluten, which makes the cake dense instead of soft and tender. Pour batter into a greased pan. I used a 9×13, topped with chocolate chips and whole open dates.  Bake in a preheated 350°F / 180°C oven: • 9×13 pan: about 30 minutes • Loaf pan: about 45 minutes The flatter the cake, the less time it needs.
