Camerashy19 :
Salt the onions closer to the end for a better caramelization. Salt releases their juices and can hamper the process.

My instincts want you to add cheese, but the onions look so decadent that I quickly dropped that idea.

I love Pommes Boulanger. I sometimes make in ramekins using fingerlings. Also add a splash of sherry & smidge of Better Than Bouillon! YUM!!

tried tonight. I always carmelize my onions in a crock pot overnight with a stick of butter and some salt. added that today to the potatoes and i found it was more like - 1.5-2 hrs to cook. TY!

Thoughts on what meat to serve with this? It looks so rich I feel like you almost want the protein to be the side dish! Chicken thighs maybe? Tri-tip?

Pro tip don't salt the onions at the start bc they'll release too much water, delaying cooking. Salting later can reduce cook time by 20-30 min

Add some water and cover the onions for them to steam… heard that makes them break down and caramel is a faster
