@heykarabae: “One of the original Palestinian traditions is that when it starts to rain and the weather is cold, the food on this day must be lentils” I made lentil soup today because it’s cold and snowy in New York and we are lucky to be in our homes warm and dry. Thinking of Palestine today and everyday.. 1 yellow onion 2 carrots 2 potatoes 2 cloves of garlic Tsp of cumin and paprika Pinch of cayenne 2 cups of lentils 1 tsp arrowroot? Lemon Chop onions and add into a pot with olive oil. Cook for a few mins to develop flavor then add carrots and peeled potatoes. Cook for 5-7 mins and add chopped garlic. Then add seasonings and washed lentils. Cover with 4 cups of water and cook until the lentils soften if you need to add more water do so! Blend with an immersion blender. I didn’t want to waste the potato peels so I made some crispy potato peels. Soak the well washed potato skins in cold water for 10 mins then dry really well. Season with olive oil, salt, pepper and paprika. Lay flat and spaced out on baking tray and bake at 400 for 10 mins or more make sure to keep checking on them after 6 mins because they will burn quickly. Serve with a lotttt of lemon,chopped parsley, and yogurt!!!
