GOOEY STRAWBERRY RHUBARB SOURDOUGH COBBLER My favorite cobbler I’ve ever made 🫢 Recipe below OR go to my website through the link in my bio 💗 #Recipe Details (8-10 servings): Strawberry Rhubarb Filling: - 1 lb (455g) fresh strawberries, quartered @Driscoll’s  - 2 1/2 cups (250g) diced rhubarb - 2/3 cup (150g) granulated sugar  - 1/2 cup (65g) all-purpose flour @Bob’s Red Mill  - 1/4 cup (58g) salted butter - 1 tbsp (10g) cornstarch - 2 tsp (8g) vanilla extract - 1/2 tsp (3g) salt - Juice of 1 lemon Sourdough Cobbler Topping: - 1 cup (130g) all-purpose flour - 1/4 cup (25g) oats, quick-cooking or old-fashioned  - 1/2 cup (120g) brown sugar - 1/2 cup (110g) granulated sugar  - 1 1/2 tsp (6g) baking powder - 1/2 tsp (3g) salt - 3/4 cup (210g) sourdough discard [substitution: 3/4 cup (170g) greek yogurt] - 1/2 cup (113g) salted butter, melted - Turbinado or coarse sugar of choice, for topping - Vanilla ice cream, for serving @Tillamook  Instructions: Preheat the oven to 350F. Grease a 7.5x10.5” or 8x8” baking dish, OR an 10” cast-iron skillet with butter. Set aside. Start by preparing the strawberry rhubarb filling. In a large pan over medium heat, add the strawberries, rhubarb, sugar, flour, butter, cornstarch, vanilla, and salt. Cook while stirring regularly, until bubbly and thickened (~5-7 minutes). Pour the strawberry rhubarb mixture into the prepared baking dish. Spread into an even layer and set aside. Prepare the sourdough cobbler topping. In a large bowl, add the flour, oats, both sugars, baking powder, salt, sourdough discard, and melted butter. Mix until well combined, the mixture will seem pretty soft and gooey! Scoop portions of the sourdough cobbler topping on top of the warm fruit in the baking dish, making sure to leave some small gaps. Sprinkle the top with turbinado/coarse sugar, if desired. Bake at 350F for 45-55 minutes, with a baking sheet placed on the rack below, until the edges are bubbling and the top is golden brown.  Remove from the oven and allow to cool for 10-15 minutes before serving. Serve warm with a scoop of vanilla ice cream, if desired.
