Prepare the quinoa: Soak the quinoa in water for 6–8 hours (or overnight). After soaking, rinse the quinoa thoroughly under running water. 2. Soak the chia seeds: Mix the chia seeds with 50 ml of water and let them sit for 10 minutes until they form a gel. 3. Blend the ingredients: In a blender, combine the soaked quinoa, chia seed gel, baking powder, salt, spices, and olive oil. Gradually add water to achieve a thick, slightly grainy batter consistency. 4. Shape the bread: Grease a loaf pan with oil and pour the batter into it. Smooth the surface. 5. Bake the bread: Preheat the oven to 180°C (350°F). Bake the bread for 50–60 minutes, until the crust turns golden. Check doneness by inserting a toothpick — it should come out clean. 6. Cool the bread: Allow the bread to cool completely before slicing to prevent crumbling. You can enhance the flavor by adding nuts, seeds, or dried herbs to the batter. Store the bread in the refrigerator for freshness.
