I think basically the "gas" from onions gets up and to anything wet - your eyes usually. Then it becomes an oxid and it makes you cry as an reaction

Another trick is to place a damp paper towel beside the cutting board since the chemicals released from cutting onions goes to the the closest moisture typically your eyes

That's not what they taught me in culinary school, putting a damp paper towel next to the cutting board really helps! Red onions are far more pungent too.
