@alexkoekies: Ingredients : ✨1 butternut ✨50g of pecorino romano cheese 🧀 ✨3 garlic cloves, 1 red onion ✨3 tbsp of mascarpone, 80g mozzarella ✨500g of gnocchi ✨good olive oil, salt and pepper Steps : 1. Peel the butternut, cut it in little squares (so it cooks faster), peel the onion and garlic 2. Put them on a baking tray that goes in the oven, sprinkle 3 tbsp of olive oil on top of the butternut, garlic and onion (be generous), add salt, pepper and paprika 3. Bake for 35’ at 200 degrees 4. Boil the pasta water and start cooking the gnocchi when the butternut and garlic are ready, since it only takes 2’ (save 4 tbsp of pasta water) 5. Mix it together using a blender, adding the mascarpone and the pecorino cheese + 2-3 tbsp of the pasta water 6. Pour the sauce over the gnocchi and mix, in a plate that goes in the oven, add some mozzarella balls on top and finish cooking it for 5’ minute on the grill and now you know! ✨ #whatsfordinnertonight #EasyRecipe #pasta
